Carolea
CAROLEASis a typical olive of Calabria and Basilicata. It is large in size and has a double attitude. The maturation is late and protracted over time, i.e. to scale.The oil is moderately fruity with hints of apple and aromatic herbs. Sometimes carob. It is never excessively bitter and the spicy finish is clear and pleasant.
