Biancolilla

BIANCOLILLA It is typical of the western part of Sicily. Its name derives from the fact that at first it is very light in color (white) and then passes to the purple color of maturation (lilac) .Even at advanced ripening this olive never takes on a dark or black color like the others instead a reddish color. The oil already a short distance from the milling tends to a straw yellow aspect; it is lightly fruity with slight hints of almond and tomato.
